Chicken with Serendipity Glaze

This is the story of the accidental discovery of a tasty dish: what happens when you ask for 3 cups of flour, but are handed, instead, 3 cups of confectioner’s sugar?
Bliss.
- 1 Chicken (frier) cut up
- 1 Cup vegetable shortening
- 3 Cups powdered sugar
- 1 Tbls Garlic Salt
- 1 Tbl pepper
- 2 tsp onion powder
Preheat oven to 425°
Put the shortening in a 9×13x2 baking dish and place in the oven while it is heating.
- Place the powdered sugar and the spices in a zip-loc bag. Toss about to mix.
- Place chicken in the bag and toss to coat evenly.
- When the shortening has melted and is up to full temperature (drops of water will sizzle and pop) take the baking dish out of the oven.
- Add the chicken skin side down and return dish to the oven.
- Let fry for 45 minutes.
- Turn chicken over and let fry another 15 mins.
- Remove from grease and place on a cooling rack for 10 mins (to allow the grease to drain).
This happened Sunday night as I was preparing dinner for Brodie and his family. In the rush of excitement, Brodie handed me the wrong canister from his mother’s pantry and I paid no attention to the odd clumps it made in the grease. (And neither of us tasted the powder on our fingers: there was dead chicken goo. Yuck!). And thus was born this dish.
