ATURDAY night I cooked a leg of chicken in my covered clay pot, along with some lentils and wild rice. There were, also, some greens in there, but I think they were mostly gone. When it was all over I have about 1.5 cups of wild rice and lentils. I put them in the fridge.
Tonight, Tops had “meal loaf mix” on sale - you know: Beef, pork and veal all ground up together. I’ve also seen it with just beef and pork. And I’ve seen beef, pork and chicken as well. Anyway… this was supper:
- 1 lb ground meat of your choice
- 1.5 cups of cooked wild rice and lentils
- 1 egg
- 1/4 cup chilli sauce (a sort of spicy catchup)
- seasoning to taste. I used a bit of salt-free Mrs. Dash.
Preheat oven to 350°
- In a large bowl, combine all ingredients.
- Place in a loaf pan and top with additional chilli sauce.
- Cook in a preheated oven for 1 hour. (During the pre-heating time I put two potatoes, wrapped in aluminium foil, in the oven. Stop wasting the pre-heating time!)
- When done, remove from the oven and from the loaf pan immediately. Let the grease cool in the pan before discarding it in a safe manner!
- Serve with baked taters and greens!
