Not Your Tuna Casserole

Ingles carries a locally grown smoked trout, marinated and smoke in grape vines and hickory. It is amazingly tasty. Tonight we tried it in a casserole. I’m sure you can get smoked trout in a number of places.

Flaxulence

Toasted about 3/4 a cup each of steel-cut oats and flax seeds in the taster oven. The flax seeds started to pop like corn! Added this toasted mixture to my sourdough brioche recipe.

Chipotle Coke Crockpot Chicken

1 Chicken (3-4 lbs) cut up into pieces

1 bottle Mrs Dash Southwestern Style Chipotle Marinade

1 Can of Coke.

Place chicken pieces in Crockpot

Combine Coke and Chipotle, pour over chicken

Cook on low for 6 hours.

Rhubarb Cobbler

For afters last evening, I took my favourite cobbler recipe and made it with rhubarb instead of strawberries.
And served it hot from the oven with Hagen Daas vanilla ice cream. It was a little too tangy for me but the ice cream mellowed it out nicely.

Double-Sauced Meatloaf

Total of 1 lb ground meat - I used Beef and Chicken for this.

1 Cup filler/binder: I used crushed Weetabix, but you can use bread crumbs, cracker crumbs, even Corn Flakes (a la Roseanne) or Grapenuts!

1 Egg

Donut recipe to die for

Do try this recipe over at Ashvegas with your favourite albeit stale doughnuts. It’s written for Krispey Kreme’s but I imagine it would work rather well with Dunkin Donut’s glazed or powdered cake things or even Tim Horton’s maple.. Yummm.
