It’s not so much a traditional brioche because it’s made with oil and eggs - not butter and eggs. But it’s tasty as all get out. This was the bread that I used to make at St Gregory of Nyssa Church for communion.

Gesundheit!
Way back when I was a Wiccan, my teachers introduced me to a wonderful Greek eatery in Astoria, NYC: Uncle George’s. They had this cool thing on the menu, “Greek Burgers… μπιφτεκια” They were, basically, Lamb-burgers with some herbs (garlic, mint, dill), broiled up and served with some roasted lemon potatoes.

There are pictures of the process.
To form the “pearls,” force droplets of the coffee-alginate mixture into a bath of calcium chloride. Serve with blini for dessert.
Don’t try this at home, kids. Sounds like something tasty for Lazarus Saturday, no?
